From the Carrigbyrne Farmhouse Cheese Company comes what is often described by gourmets as the greatest cheese in the world, Brie.

It is close on 30 years since, Patrick Berridge and his wife Juliet, produced the first cheese.


The family run a 198 acre dairy farm on the outskirts of the village of Adamstown and live in a 19 Century farm house bought by Patrick's father in 1963.

St. Killian Cheese

St Killian FullThis hexagonal-shaped full-flavoured Camembert type cheese, is made with vegetable rennet. Hand-crafted with a bloomy white rind, the 250g hexagonal is made of pasteurised cow's milk entirely from the farm's own herd. Mild when young, the cheese develops an aromatic, clean flavour and softens as it matures.

On a cheeseboard, remove from the fridge an hour before serving allowing it to reach room temperature and develop its flavour.


 

St. Brendan Mini Brie

brendanminiMini-brie, another cheese made from different Carrigbyrne is only produced for about 4 weeks before the Christmas period. It has a more mature flavor and a creamy smooth interior. This cheese is ideal as a gift or a party.






 

St. Brendan

St BrendanSt. Brendan Brie is an in- house matured cow's milk cheese, hand-made by traditional methods on the Berridge family farm. This cheese leaves the cheese rooms as a whole 1.4kg octagonal and when in the supermarkets, is cut into segments to the requirement of the customer.





 

Emerald Irish Brie

Emerald Irish Brie is is a large brie that weighs about 3kgs. It is a specially matured wheel that has a very creamy taste with a hint of mushroom and lemon. It leaves the farm as a whole and the delicatessens and supermarkets cut it to different sizes.

As it is large, it takes much longer to mature and may be held for three weeks before the shops get it so that the taste is at its peak.
