At the moment Carrigbyrne Farmhouse Cheese is working on a new cheese that is equivalent to a Vacherain cheese which is made at the foot of theLongevilles mountains in France. It is a soft cheese made from raw/pasteurised milk with an uncooked, slightly pressed curd and a crust which is washed then given a downy coating.
Then it is encircled by strip of spruce bark and packaged in a box made of spruce wood. It won't be too long before Carrigbyrne produces this cheese.
St. Killian Mini is a new product after some market research. It is believed that people want convenience products and the St. Killian Mini is just that. This is made exactly the same as the original St. Killian but is smaller at just 150g. It is in test marketing at the moment in a couple of Deli shops.
