St. Killian is Carrigbyrne's signature cheese.. It's a delicious, full-flavoured camembert, made with vegetable rennet. Mild when young, the cheese develops and aromatic, clean flavour and softens as it matures. It has a smooth buttery taste and soft melting interior. Patiently hand-crafted in both 250g hexagonal and 150g round, with a bloomy white rind. St. Killian's is freshly made from pasteurised cow's milk, sourced from the farm's own herd.

Humming Bark has recently been developed by Paddy and Charlie, a semi-soft cheese with a strong nose and full-flavoured taste. Aged in spruce bark and produced with only the finest milk, this cheese has already been awarded Reserve Champion at both Irish Cheese Awards the British Cheese Awards in 2014, along with Great Taste Awards in both 2015 & 2016. Not for the faint hearted and a connoisseurs delight, this particularly pungent cheese is a delicious new member to the Carrigbyrne line up.
The first cheese to be produced on Carrigbyrne Farm, St. Killian Brie will always have a special place in our hearts. This is an in-house matured cow's milk brie, hand-made by our traditional methods. A delicate creamy taste with a hint of mushroom and lemon, this classic cheese has become a firm favourite with our customers.
Available in 1.5kg octagonal and 3kg round, St. Killian Brie is commonly sold in supermarket deli counters.
